YET ANOTHER MEATLOAF
2 pounds ground beef
4 ounces onion, chopped, 1 medium
1 tablespoon oil
1/3 cup Better "Heinz" Ketchup or other low carb ketchup
2 cloves garlic, minced
2 eggs
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
1 tablespoon No-Salt Seasoning or chili powder
6 ounces cheddar cheese, shredded, 1 1/2 cups

In a small skillet, sauté the onion in oil until caramelized. Combine all of the ingredients in a large bowl. Line a 7x11" or 9x13" baking pan with nonstick foil. Put the meat mixture in the pan and shape into a loaf. Bake at 375º for 40-50 minutes, or until a meat thermometer reads 140º (see my comment below).

Makes 8 servings
Can be frozen

My favorite thing to do with leftover meatloaf is to make my Meatloaf Patty Melt. So, I tried to create a good basic meatloaf just so I could make some. I decided not to put on any kind of topping so that I could later add whatever kind of sauce I'd like on my Patty Melt. Creamy BBQ Sauce is very good for this.

I think that next time I make this, I will only bake it for about 35-40 minutes until it reaches 135º in the center. By the time it reaches 140º, it's a little too well done.
