MEATLOAF PATTY MELT
1/2 tablespoon butter
2 ounces onion, sliced or coarsely chopped, about 1 small
1 slice leftover meatloaf, warmed
1/2 ounce cheddar cheese, shredded or sliced

In a skillet, sauté the onion in butter until tender and browned. Season with salt to taste. Add the meatloaf to pan and fry until heated through and browned on both sides. Cover the meatloaf with the onions; top with cheese. Cover the pan to melt cheese; serve at once.

Makes 1 serving
Can be frozen

This is a nice way to serve leftover meatloaf. The onions really helped make it juicier. If you're on induction, you may want to use only half the amount of onion to save about 2 net carbs. I used smoked cheddar cheese on mine and that was very good, but regular cheddar would be just as nice.
