CARBQUIK BISCUIT STUFFING
6 day-old Haley's Nana's Biscuits, cubed
2 tablespoon butter
1 stalk celery, chopped
1 ounce onion, chopped, 1/4 cup
3 medium mushrooms, chopped, 2-3 ounces
1 cup chicken broth
1/4 teaspoon poultry seasoning
1/4 teaspoon pepper
2 tablespoons fresh parsley, chopped
2 tablespoons chicken drippings, optional
1 egg, beaten

Place the cubed biscuits in a large bowl. In a medium skillet, sauté celery, onion and mushrooms in butter until very tender. Heat the chicken broth and stir in the poultry seasoning, pepper and parsley. Taste broth and add more seasonings, if desired. Gently toss the sautéed vegetables and broth mixture into the biscuits cubes. Add the chicken drippings, if desired, and adjust seasoning if necessary. Fold in beaten egg. Spread in a shallow baking dish and bake at 350º about an hour or until well-browned and crusty. I baked mine in a small casserole dish and found that the crusty parts were the best so a shallow baking dish will give it more surface area for crisping.

Makes about 6 servings

Although the flavor is pretty stuffing-like, I'm not fond of the texture, other than the crusty bits. The stuffing is a bit mushy and grainy and doesn't satisfy my love for real stuffing.
