SMOKED SAUSAGE & SWISS CHEESE QUICHE
1/2 pound smoked sausage *
6 ounces Swiss cheese, shredded
3/4 cup heavy cream
1/2 teaspoon salt
1 teaspoon chives, minced
Peel the skin off the smoked sausage and cut in half lengthwise. Cut each half into halfmoons. In a medium bowl, whisk the eggs. Add the cream, salt and chives; whisk well. Arrange the cheese and sausage evenly in the bottom of a greased 9-10 inch glass pie plate. Pour the egg mixture over the cheese. Bake at 350º, 35-40 minutes, until a knife inserted in the center comes out clean.
Makes 6 servings
Can be frozen
