SMOKED SALMON QUICHE WITH DILL
4 ounce package smoked salmon
4-8 ounces Monterey jack cheese, shredded
1 green onion or chives, chopped
3 eggs
1 cup heavy cream
1/2 teaspoon dried dill or 2 teaspoons fresh dill
Dash pepper

Arrange the cheese, salmon and green onions in a greased pie plate. Beat the eggs, cream and seasonings; pour into the plate. Bake at 350 35 minutes. Let stand 10 minutes before cutting.

Makes 6 servings
Can be frozen

Per Serving: 349 Calories; 30g Fat; 18g Protein; 3g Carbohydrate; trace Dietary Fiber; 2.5g Net Carbs

This was very good, but keep in mind that smoked salmon has 1 carb per ounce. I used a full 8 ounce package of Monterey jack cheese the second time I made this and there's no change in the carb count per serving.
