SLOW COOKER BARBECUE PORK
1 medium onion, chopped (about 4 ounces)
3 pounds boneless pork shoulder ribs
Salt and pepper, to taste
1 1/2 cups My Favorite BBQ Sauce, divided

Scatter the onions over the bottom of a slow cooker. Arrange the pork ribs over the onion and season both sides of each piece with salt and pepper. Pour in about 1/2 cup of the BBQ sauce and spread it around to coat the meat. Cover the slow cooker and cook on HIGH for 1 hour. Stir everything and cook on LOW for another 4-5 hours or until the meat is very tender and falling apart. Using a ladle, scoop out as much of the liquid as you can and discard it. Add the rest of the BBQ sauce, cover and cook the meat for another hour on LOW. Adjust the seasoning if necessary before serving.

The amounts and nutritional counts listed for this recipe are only approximate because I didn't measure anything. It's so easy that it really doesn't need a recipe. Add another carb or two per serving if you make the BBQ sauce with granular Splenda instead of liquid. The pork is really good served with Frozen Cucumber Pickles on the side. The tang of the pickles added some zing to the sweet, smoky pork. I didn't think to take a photo but I will try to remember to do so when I reheat some of the leftovers.
