SLOPPY JOE UNSTUFFED PEPPERS
1 pound ground beef
1 ounce onion, chopped, about 1 1/2 tablespoons
1 stalk celery, chopped fine
2 green peppers, cut into large chunks, 6 ounces each
1/2 clove garlic, minced
1/4 cup tomato sauce
1 teaspoon granular Splenda
1 1/2 teaspoon vinegar
1 1/2 teaspoon Worcestershire sauce
1/2 teaspoon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
8 ounces cheddar cheese, shredded or cubed

Brown the hamburger, onion, celery and garlic; drain the fat. Add the chopped peppers and sauté until crisp-tender. Stir in the tomato sauce, Splenda, vinegar, Worcestershire, mustard, salt and pepper. Cook on low until heated. Put in an 8x8" glass baking dish; mix in the cheese. Bake, uncovered, at 350º for 25-30 minutes until cheese is melted.

Makes 4-6 servings

This is a pretty simple dish, but tasty. It is also good served over cooked, buttered cabbage.
