This time I made the batch of Tuna Patties into 5 smaller ones. That allowed for them to get more of a crispy crust on the outsides. I also added a little butter to the cooking oil to aid in the browning. They were very good with coleslaw.

To top my hamburger with lettuce and tomato, I chopped both and mixed with a bit of mayonnaise. This made it stay on top of the burger better and was easier to eat than if left in large pieces.

I think I've definitly mastered the art of making Tuna Patties! Today I made them into 6 very small patties and fried them in a bit more oil and butter until very, very brown and crispy. I don't think I've been eating enough fat lately since I've felt stronger hunger pangs the past couple days. Hopefully this extra helping of fat will help. I've nearly run out of food to eat and don't go to the store until tomorrow morning. That means I'll have to scrounge up something for tomorrow's breakfast. I might endulge in a piece of Lilah's Lemon Cheesecake that I've stashed in the freezer. It's either that or a piece of string cheese.

I'm also finding that my grocery bill is going through the roof lately. Part of it is that we had company last weekend and also that prices are going up like crazy, but it's also because I'm having to buy a lot more meat than I used to and good vegetables. I used to only buy meat when it was on sale and stocked up. Now I'm finding that I'll have to buy meat whether it's on sale or not, just so I don't run out of things to eat. I usually only spend about $60 a week on groceries (including paper and cleaning products and everything), but the last 2 weeks it's been closer to $100. I guess I'll have to increase my food budget. To offset this, I've cut back on the amount of soda and chips I used to buy for my "boys" (son and husband). It's not good for them anyway. Has anyone else gotten the feeling that the prices on certain foods is going up due to the number of people on the Atkins diet? Bacon used to go on sale for about $1 and now a sale is $2-2.50. Butter, cream, cream cheese and meat in general have all gone way up. I think we're being taken advantage of. Butter at over $3.00 a pound is highway robbery! Only eggs have seemed to stay at a steady price.

I tried using only 4 teaspoons of "Seasoning for Tacos" and it tastes just as good and saves 4.5 carbs. I also figured out that 1 pound of taco meat is enough for about 6 servings instead of the 4 that I based my counts for the seasoning and Taco Salad recipes on.
