SCRAMBLED EGGS WITH CHEESE AND HAM
8 ounces ham, diced
2 tablespoons heavy cream
Salt and pepper, to taste
1 tablespoon chives, minced, optional
2 ounces cheddar cheese, shredded
Beat the eggs with the cream and season with salt and pepper. Meanwhile heat a tablespoon or so of butter in a large non-stick skillet and sauté the ham until it starts to brown a little. Pour in the eggs and scramble over medium-low heat until nearly set. Stir in the chives and cheese. Continue cooking until the cheese has melted and the eggs are done to your liking.
