SAUTÉED FRESH SPINACH
2 tablespoons butter
9 ounce package fresh baby spinach, large stems removed
Salt and pepper, to taste
Dash garlic powder or Spicy Seasoning Salt, to taste

Melt the butter in a medium skillet. Add the spinach; cook and stir on medium-high heat just until the spinach starts to wilt. Season to taste and serve.

Makes about 4 servings
Can be frozen

Per Serving: 66 Calories; 6g Fat; 2g Protein; 2g Carbohydrate; 1g Dietary Fiber; 1g Net Carbs

I was never crazy about cooked frozen spinach except when used in a recipe. When the store had the bags of fresh spinach buy one/get one free, I had more than I could use for salad alone so I decided to try cooking some. I was very pleasantly surprised at how good it is and will definitely make it again this way.
