ROAST CHICKEN

Whole Roast Chicken
Clean the inside of the chicken well. Season inside and out with your desired seasonings. Place in a shallow roasting pan and roast according to the following chart until juices run clear.

2 - 2 1/2 lb.     400     1 - 1/4 hours
2 1/2 - 3 lb.     375     1 1/4 - 1 3/4 hours
3 - 4 lb.           375     1 3/4 - 2 1/4 hours
5 - 8 lb.           325     2 1/2 - 3 1/2 hours

Chicken Thighs
Place in a large baking pan or shallow roasting pan. Season on both sides with your desired seasonings, such as garlic powder, salt, pepper, seasoning salt, etc. Make sure that the chicken is skin side up. Roast at 425 for 35-45 minutes or until the juices run clear.
