QUICHE ITALIANO
1 pound ground beef
1/4 pound Italian sausage
1 clove garlic, minced
2 tablespoons onion, chopped
2 tablespoons green pepper, diced
1/2 cup fresh mushrooms, sliced, 1 1/4 ounces
1/2 cup tomato sauce
Salt, to taste
1/8 teaspoon pepper
1/8 teaspoon basil
1/8 teaspoon oregano
2 eggs
1/2 cup mayonnaise
1/4 cup heavy cream
Pinch parsley, optional
8 ounce mozzarella cheese, shredded and divided
1 tablespoon parmesan cheese, grated

Brown the hamburger and sausage with the garlic, onion, peppers and mushrooms; drain the fat. Add the tomato sauce and seasonings to taste. Put the meat sauce in a greased pie plate. Mix in half of the mozzarella cheese. Beat the eggs and mix in the mayonnaise, cream and parsley; beat well. Stir in the parmesan and the rest of the mozzarella. Pour the custard over the meat. Sprinkle the top with a little basil, if desired. Bake at 350 for 35 minutes or until set. Let stand 10 minutes before serving.

VARIATION:
Prepare as directed above, but use 1/2 pound Italian sausage and a whole 8 ounce can of tomato sauce. Instead of using a pie plate, make this in a greased 7x10" baking dish. This gives you slightly more room for the extra ingredients than a pie plate. Do not use a 9x13" pan. There won't be enough topping to spread over the surface. I also sprinkled a little extra parmesan over the top before baking. The baking time remains the same as above.
