MICROWAVE HAMBURGER QUICHE
1/2 pound ground beef
4 eggs
1/2 cup green onion, chopped, about 1 bunch
1/3 cup heavy cream
1/3 cup mayonnaise
1/2 teaspoon salt
1/8 teaspoon pepper
3 ounces cheddar cheese, shredded

Crumble the meat in a glass pie plate. Microwave on HIGH 2 1/2-4 minutes until cooked through. Break up the meat and drain the fat. In a medium bowl, mix all of the remaining ingredients except the cheese. Pour over the meat. Cook on MED power 4 minutes. Push the cooked portions to the center of the plate. Cook on MEDIUM 4-8 minutes until almost set, lifting the edges of the set egg after half of the time. Top with the cheese and cook on MEDIUM about 2 minutes until melted. Let stand several minutes before serving.

This recipe came from a non low carb microwave cookbook and needed no alterations. It was easy to make, but I'd call it more of an open-face omelet than a quiche. This would be nice for a quick supper.
