LEMON PUDDING MOUSSE
1 small package sugar free instant lemon pudding mix
1 1/2 cups heavy cream
1/2 cup water

Mix the cream and water in a medium bowl. Add the pudding mix; whisk briskly just until it thickens. Don't over mix or you may end up with butter. It will thicken much quicker than stated on the package. Eat at once or chill until serving time.

Makes 6-8 small servings
Do not freeze

I realize that pudding mix is pretty carby, but since I'm on Maintenance now, I will eat occasional treats like this. It's still much lower in carbs than most sugary desserts. The package states 4 servings, but when made with heavy cream, it is so rich that very small servings will be plenty. You can use any flavor of sugar free instant pudding for this, but lemon is very good. I've tried this with banana pudding and the lemon is much better.

You can save half a carb per serving by using 1 cup cream and 1 cup water. Different flavors of sugar free pudding have different carb counts. Here are the carb counts for Banana and Chocolate:
