HAM AND SWISS SKILLET
1 cup mushrooms, sliced, 2 1/2 ounces
1 green onion, sliced
1 tablespoon butter
1 small zucchini, chopped fine, 4 ounces
3/4 cup ham, chopped fine, about 3 slices lunchmeat
6 eggs
Dash salt
Dash pepper
2 ounces Swiss cheese
Chives, for garnish

Sauté the mushrooms, green onion and zucchini in butter in a large skillet until tender. Season with salt and pepper. Stir in the ham and sauté until hot.

Beat the eggs just until blended; season with salt and pepper. Pour the eggs over the ingredients in the skillet. Cook on low, without stirring, until set on the bottom and edges. Lift the edges to let the raw egg flow underneath. Top with the cheese; broil 5 inches from the heat for 1-2 minutes to melt the cheese. If you don't have an oven-proof skillet, carefully slide everything onto a large platter or quiche pan. Microwave about 2-3 minutes until the cheese is melted. Sprinkle the top with chives.
