GRILLED CHEESE SANDWICH PIE
1 egg
3/4 cup Carbquik
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup Carb Countdown whole milk or 1/2 cup heavy cream mixed with 1/2 cup water
4 ounces cheddar cheese, shredded, 1 cup

In a small bowl, mix the egg, Carbquik, salt, pepper and 1/2 cup milk; beat with an electric mixer until smooth. Add the remaining milk; beat well on low speed. Some small lumps of bake mix will remain. Stir in half the cheese. Pour into a well-greased 9-inch pie pan and use your spatula to evenly distribute the cheese. Bake at 425º 25-30 minutes. Top with the remaining cheese and bake about 2 minutes until melted. The batter can be prepared and chilled up to 1 hour before baking.

Makes 4 servings

I converted this from an old recipe, substituting Carbquik for the flour. It's sort of very thin toasty brown quiche topped with melted cheese. It's quick and easy to throw together, but I thought it was a little bland. I'm not sure what to do to perk it up. Maybe someone can come up with some tweaks for this.
