GARLIC-LEMON BUTTER
3 tablespoons butter, softened
1 clove garlic, minced
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped
1/8 teaspoon salt, or to taste

Beat the butter with a fork in a small bowl until fluffy. Stir in the remaining ingredients. Spread over baked fish or other seafood.

Makes 4 servings
Can be frozen

This butter sauce came from a shrimp recipe, but I couldn't afford to buy shrimp. So, I decided to serve it over some baked Tilapia instead. It's very garlicky with a bit of tang from the lemon. I think I might spread it over the fish before baking it next time so that the garlic will get cooked. The raw garlic was a little strong, but still good.
