FRAN'S JOE'S SPECIAL
1/2 pound ground chuck
8 green onions, chopped, about 2 1/2 ounces
2 cloves garlic, minced
Salt and pepper, to taste
9 ounces fresh spinach
Hot sauce, to taste
3 eggs, lightly beaten
2 tablespoons fresh basil, chopped, optional
3 tablespoons parmesan cheese, grated

Brown the meat in a large skillet along with the green onions and garlic; drain the grease. Season to taste with salt and pepper. Add the spinach and cook until it wilts. If your skillet isn't large enough, you'll have to add the spinach in batches. Whisk the hot sauce into the beaten eggs and add them to the skillet. Cook just until the eggs start to set. Remove the skillet from the heat and add the basil and parmesan cheese.

This is based on a recipe from Fran McCullough's "Living Low-Carb" book. It's a pretty well-known dish that's been around for many years but I'd never tried it until now. Frankly, I didn't care for it much. It doesn't taste all that bad but I don't like the consistency. I'm not a big fan of basil so I left it out. However, I did sprinkle some on a little bit just to see if it improved the flavor of the dish but I didn't like it. This is not a recipe that I'd make again.
