FISH & VEGETABLE PACKET
1 piece heavy duty foil, 12 x 18"
1 frozen fish fillet (no need to thaw, if thin)
2/3 cup frozen or fresh vegetables, your choice such as cauliflower, broccoli, zucchini, yellow squash, bell peppers, etc.
Salt and pepper
Herbs and spices, as desired
Butter

Place the foil on a baking sheet. Spray with non-stick spray. Place the fish in the center of the foil; season. Place the frozen vegetables around the fish; season. Dot with butter. Fold up the foil, sealing well, but leaving room for air to circulate. Bake at 450 for 30 minutes. Open the foil carefully to avoid getting burned by the steam.

I used a mixture of cauliflower and yellow squash, which was quite good.
