FAJITA BURGERS
1 tablespoon oil
1 each red, yellow and green pepper, cut into 1-inch strips *
1 medium red onion, sliced, 4 ounces *
1 1/2 pounds ground turkey
2 tablespoons Seasoning for Tacos
4 slices pepper-jack cheese, about 1/2 ounce each
Toppings (see ideas below)

Heat the oil in a wok or large skillet over medium-high heat. Sauté the peppers and onions until tender-crisp and a little browned on the edges. Season with salt and pepper to taste.

Meanwhile, mix the taco seasoning into the ground turkey then shape the meat into four large patties. Grill or pan-fry until done to your liking. Turn off the heat, top each patty with a slice of cheese and let stand a couple minutes until the cheese starts melt. The warm pepper mixture will melt the cheese a bit more. Spoon the peppers and onions over each serving then add the toppings of your choice. The additional toppings below aren't included in the carb counts. Add about 1 net carb per serving if you top them with 1 tablespoon each salsa and Cilantro Pepita Sauce.

Makes 4 servings
The burgers can be frozen but not the toppings

* I used peppers that weighed about 6-8 ounces each before trimming or between 4-5 ounces after trimming. I chopped off the tops of the peppers but didn't use them in this recipe. I chopped and froze them to use later on pizza or in another recipe. The counts are based on the trimmed weight minus the tops. The onion weighed about 5 ounces before trimming.

Guacamole
Pickled jalapeños
Sour cream
Lettuce, shredded

I enjoyed this very much. Of course you could use ground beef instead of ground turkey and any kind of cheese that you like.
