CRUSTLESS BROCCOLI, BACON & CHEESE PIE
1/2 pound bacon, chopped
1 small onion, sliced, 2 1/2 ounces
6 eggs
16 ounces frozen, chopped broccoli, cooked & drained well
3/4 cup heavy cream
8 ounces Swiss cheese, shredded
1/2 teaspoon salt
1/4 teaspoon cayenne

Grease a 9 1/2-10" deep dish pie plate. Fry the bacon in a medium skillet until crisp; set aside, reserving 1 tablespoon of the drippings in pan. Sauté the onion in the drippings until tender. Beat the eggs, cream and seasonings in a large bowl. Stir in the remaining ingredients and mix well. Pour into the pie plate. Bake 350º for 35-40 minutes until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

Makes 6-8 servings

I normally layer the veggies, meat and cheese in the pie plate then pour the egg mixture over them, but there is a lot of broccoli in this recipe so I recommend mixing everything in a large bowl to ensure that everything is well blended. This was very good. The combination of broccoli and bacon was quite nice.
