CRACKER BARREL COUNTRY GREEN BEANS
1/4 pound bacon, chopped, 4 slices
3 14-ounce cans whole green beans with liquid
1 teaspoon granular Splenda
1/2 teaspoon salt
1/2 teaspoon pepper
1 small onion, chopped, 2 1/2 ounces

In a 2-quart pot, cook the bacon until browned but not crisp. Do not drain the grease. Add the beans and liquid, Splenda, salt and pepper. Sprinkle the onion over the top of the beans and don't mix in. Cover and bring to a light boil. Simmer 45 minutes. Adjust the seasoning, if needed.

Makes about 6 servings
Can be frozen

These aren't bad, but you really have to like very well cooked canned green beans. They have the slow cooked flavor of southern-style green beans and they're supposedly a copycat of the beans served at Cracker Barrel restaurants. It's been too many years since I've eaten at the Cracker Barrel to remember. I was expecting them to come out quite salty but they didn't. I used a 2-quart pot as directed in the recipe, but it was very full. I recommend using a 3-quart pot instead.
