6-8 boneless chicken thighs, about 29 ounces
1 tablespoon oil
1 cup low carb ketchup *
12 ounce can diet cola **
In a large skillet, with a lid, brown the chicken in hot oil. Remove the chicken from the pan and drain the grease. Combine the ketchup and cola and add to the skillet. Put the chicken back in the pan; bring to a boil then cover and simmer 30 minutes. Uncover the pan and simmer 30 minutes longer to reduce and thicken the sauce.
Makes 4-6 servings
Can be frozen

Although this tastes very good, the carbs are a bit high for the number of servings you get considering that none of the carbs are coming from vegetables. It also made a mess all over the stove and the chicken stuck to the pan very badly when browning it. Since the chicken shouldn't really take an hour to cook, I think I'd skip the browning step and just add the sauce to the raw chicken. Don't try to use white meat with this recipe. The cooking time is too long and the chicken would fall apart.
I just wanted to add that my husband said he really liked it. Of course he couldn't guess what was in it and was very surprised when I told him. He thought it might be some kind of sloppy joe sauce. It does taste a bit like that.
