JOSIE'S CHICKEN DIVAN CASSEROLE
3 cups diced cooked chicken
16 ounces fresh broccoli, cut up, 1 bunch
1/2 pound fresh mushrooms, sliced
1 tablespoons butter
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup chicken broth from bouillon, make it extra strong *
1/2 teaspoon curry powder
Salt and pepper, to taste
4 ounces cheddar cheese, shredded
6 strips bacon, fried until crisp, crumbled

Cook the broccoli until slightly underdone; drain well. Meanwhile, sauté the mushrooms in the butter until not quite tender. Arrange the chicken, broccoli and mushrooms in a greased 9x13" pan. Mix the mayonnaise, sour cream, broth and seasonings; pour over the chicken. Top with the cheese and bacon. Bake at 350º for 20-25 minutes. Let stand 10 minutes before serving.

Makes 6-8 servings
Do not freeze

* I would leave out the water or broth next time and just stir the dry bouillon granules into the mayonnaise/sour cream mixture. The additional liquid is not needed

As I was eating this I thought it tasted rather familiar. It turns out that this is nearly the same as the Cheesy Chicken Broccoli Casserole, but seasoned with curry powder instead of garlic powder and there are mushrooms added. Both are very good recipes, but I think the 1/4 cup water/broth should be omitted from both. It ends up in a puddle on the bottom of the pan. My husband took one bite of this as said "This is goooood". Thanks Josie. It's also similar to my Chicken Divan recipe, but a bit quicker to put together. Click the photo to see a close-up.
