CHEESY SPINACH BEEF BAKE
2 pounds ground beef
1/2 cup onion, chopped
2 eggs, beaten
10 ounce package frozen chopped spinach, thawed and drained well
4 ounce can mushrooms, drained
8 ounces cheddar cheese, shredded
1/2 teaspoon garlic powder
Salt and pepper, to taste

Brown the hamburger and onion; drain the fat. Mix all of the ingredients in at least a 2-quart greased casserole. Bake, uncovered, at 375º for 25-30 minutes until hot and bubbly.

Makes 6-8 servings
Can be frozen

This is a slight variation on a recipe I found somewhere called "Spinach Beef Bake". That recipe called for 1 1/2 pounds hamburger, 4 ounces monterey jack cheese and 1/4 cup parmesan as well as a full teaspoon of garlic powder. I used cheese that I had on hand, but will try the original recipe another time. I thought a teaspoon of garlic powder sounded like too much, but may try it next time.
