CLEOCHATRA'S BEST EVER REVOL-OOPSIE ROLLS
3 eggs, separated
2 teaspoons granular Splenda or equivalent liquid Splenda
Dash salt
Pinch cream of tartar
3 ounces cream cheese, do not softenBeat the egg whites and cream of tartar until stiff. In another bowl, beat the egg yolks, Splenda, salt and cream cheese with a mixer until smooth. Gradually fold the yolk mixture into the egg whites being careful not to deflate the whites. Spray a baking sheet or muffin top pan with cooking spray. Divide the mixture into 6 mounds then flatten them slightly. Bake at 300º 30 minutes or until lightly browned on top but soft and not dry and crisp. Cool on the baking sheet for a few minutes then cool completely on a rack. Store in an airtight bag in the refrigerator.

My batter came out quite thin so it's a good thing that I used my muffin top pan. I think it would have spread all over the place on a baking sheet. Mine also puffed up and then sunk in the middle and they look almost like bowls. I tasted one plain with butter and enjoyed it but I'm not sure if they'll be sturdy enough to hold a burger. Later I made one bun into a tuna sandwich. I wasn't too wild about the eggy taste of the bun. Click here to see Cleochatra's photo. Here is a photo of the bottom of a bun:

UPDATE: I've found a tasty use for these rolls. Because they turn out sort of bowl-shaped when baked in a muffin top pan, they're great for filling with things. I had a couple of them warmed in the microwave then topped with butter and sugar free pancake syrup for a yummy breakfast which tastes a lot like French toast. A sprinkle of cinnaman and Splenda on top was nice too. They could also be filled with sugar free jam or fruit, etc.
UPDATE: I finally made another batch of these and made myself a burger with them. My buns came out a little dark this time but they still tasted very good and got a bit more baked in the center. My burger was wonderful but VERY messy!
