BAKED CHICKEN BREASTS
4 boneless chicken breasts
1/3 cup mayonnaise
1 1/2-2 ounces pork rinds, crushed, about half a 3-ounce bag
Dash paprika, garlic powder and pepper
Salt, to taste
Put the chicken in a small bowl. Add the mayonnaise and stir to completely coat the chicken. Dip the chicken into the crushed pork rinds to coat evenly on both sides. Place in a greased baking dish. Sprinkle with desired seasonings. Bake at 425º for 20-25 minutes until the chicken is cooked through.

I didn't care for this very much. Tasted too "porky" to me. I don't think I'll make this or any other pork rind coated chicken or meat again. If you like pork rinds, you'll probably like this recipe.
