ASIAN "SLOPPY JOES"
1 pound ground beef
1/4 teaspoon xanthan gum
2 cloves garlic, minced
2 tablespoons sesame oil
1/2 cup soy sauce
1 tablespoon rice vinegar
1/4 cup water
1/2 teaspoon pepper
1/4 cup granular Splenda or equivalent liquid Splenda
14 ounce can bean sprouts, drained
2 green onions, chopped

In a large skillet, brown the ground beef; drain the fat. Stir the xanthan gum into the ground beef. Add all of the remaining ingredients except the green onions. Simmer about 10 minutes; stir in the green onions. Serve over chopped iceberg lettuce, Faux Rice or Zucchini "Noodles", etc.

Makes about 6 servings
Can be frozen

With granular Splenda:
Per Serving: 197 Calories; 13g Fat; 15g Protein; 6g Carbohydrate; 1g Dietary Fiber; 5g Net Carbs

With liquid Splenda:
Per Serving: 193 Calories; 13g Fat; 15g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

Although the flavor of this is good, it's a little too salty. Unless I can think of a way to cut the saltiness, I have to give this a low rating. If you serve it over 2 ounces of iceberg lettuce per serving, there is no change in the net carb count.
